Sweet iron/ Blue steel: 54% carbon, 46% manganèse. Sweet iron bits gets oxidized with air and humidity. Then comes a thin line of rust has a sweet taste, and stimulates the saliva. By getting more saliva the horse gets more contact on its bit. The oxydation process will change the color to grey / brown.

The gag bit works on the balance of the horse. It helps the rider make the horse work on his hind-end. It's a great tool to divide the points of pressure on the mouth and the poll.
